Dans les coulisses de la salle Eric Ericson de Skeppsholmen, l’activit\u00e9 est intense. Dans une heure, 200 invit\u00e9s s’attableront pour un d\u00eener \u00e0 trois plats – dans une salle qui, il y a quelques minutes \u00e0 peine, \u00e9tait utilis\u00e9e pour une conf\u00e9rence. Au milieu de tout cela, Francisco, le chef cuisinier, est calme mais concentr\u00e9, distribuant les t\u00e2ches \u00e0 son \u00e9quipe.  <\/p>\n\n\n\n

– La beaut\u00e9 de la restauration r\u00e9side dans le fait que chaque occasion est unique. Nous devons nous adapter au lieu, aux invit\u00e9s et \u00e0 l’atmosph\u00e8re. Pour moi, c’est un m\u00e9tier cr\u00e9atif – c’est un peu comme construire un restaurant \u00e0 partir de z\u00e9ro, mais juste pour un soir, <\/em> Francisco dit. <\/p>\n\n\n\n

Des cuisines \u00e9toil\u00e9es \u00e0 Skeppsholmen, avec toute la ville de Stockholm comme terrain de jeu<\/strong> <\/p>\n\n\n\n

Francisco poss\u00e8de une solide exp\u00e9rience dans certaines des meilleures cuisines de Su\u00e8de. Il a travaill\u00e9 avec le chef \u00e9toil\u00e9 Mathias Dahlgren, a \u00e9t\u00e9 chef cuisinier \u00e0 Gondolen et sous-chef cuisinier \u00e0 Ellery Beach House. Mais sa passion pour la cuisine est n\u00e9e bien avant.  <\/p>\n\n\n\n

– J’ai grandi en consid\u00e9rant la nourriture comme un \u00e9l\u00e9ment naturel de la vie. Ma grand-m\u00e8re et mon p\u00e8re cuisinaient toujours \u00e0 partir de rien, avec beaucoup d’amour et de respect pour les ingr\u00e9dients. C’est l\u00e0 que l’int\u00e9r\u00eat s’est \u00e9veill\u00e9, <\/em> dit-il. <\/p>\n\n\n\n

Lorsqu’il a eu l’occasion de prendre en charge la partie restauration du groupe Skeppsholms, il y a vu la possibilit\u00e9 de r\u00e9aliser un r\u00eave : combiner le meilleur du monde de la restauration avec la flexibilit\u00e9 de la restauration. <\/p>\n\n\n\n

\u00ab\u00a0Des ar\u00f4mes purs et des mati\u00e8res premi\u00e8res durables<\/strong> <\/p>\n\n\n\n

La philosophie de Francisco est claire : la nourriture doit \u00eatre propre, durable et honn\u00eate. <\/p>\n\n\n\n

– Je veux que les clients sentent que chaque ingr\u00e9dient peut parler de lui-m\u00eame. Des saveurs pures, de bons ingr\u00e9dients et un esprit de durabilit\u00e9 clair. C’est la base de tout ce que nous faisons, <\/em> dit-il. <\/p>\n\n\n\n

Toutefois, la livraison de plats de qualit\u00e9 en dehors des murs du restaurant exige de la planification et de la finesse. <\/p>\n\n\n\n

– Il y a beaucoup de logistique. Nous pr\u00e9parons autant que possible dans notre cuisine, mais de nombreuses \u00e9tapes sont r\u00e9alis\u00e9es sur place, juste avant le service. Les prot\u00e9ines comme la viande et le poisson sont particuli\u00e8rement d\u00e9licates – elles doivent \u00eatre parfaites au bon moment. Il n’y a pas de raccourcis. <\/em> <\/p>\n\n\n\n

Une exp\u00e9rience au-del\u00e0 des attentes<\/strong> <\/p>\n\n\n\n

Avec son service de restauration, Skeppsholmsgruppen souhaite cr\u00e9er plus qu’une simple assiette – le repas doit faire partie de l’exp\u00e9rience globale. <\/p>\n\n\n\n

– Nous ne voulons pas seulement servir un d\u00eener, nous voulons cr\u00e9er un sentiment. Lorsque les invit\u00e9s quittent nos \u00e9v\u00e9nements, ils doivent avoir v\u00e9cu quelque chose d’un peu diff\u00e9rent, quelque chose dont ils se souviennent. C’est pourquoi nous travaillons toujours sur les d\u00e9tails, tant au niveau du go\u00fbt que de l’organisation et de l’impression g\u00e9n\u00e9rale, <\/em> Francisco dit. <\/p>\n\n\n\n

Une entreprise en pleine croissance<\/strong> <\/p>\n\n\n\n

Depuis sa cr\u00e9ation, le service de restauration de Skeppsholmsgruppen s’est rapidement d\u00e9velopp\u00e9. Francisco voit l’avenir comme un d\u00e9fi et une source d’inspiration.  <\/p>\n\n\n\n

– Nous sommes dans un secteur o\u00f9 de plus en plus de gens fixent des normes \u00e9lev\u00e9es – et j’aime cela. Notre ambition est de continuer \u00e0 nous d\u00e9velopper, de relever la barre de ce que peut \u00eatre la restauration. Je veux que nos clients aient le sentiment d’obtenir la m\u00eame qualit\u00e9 que dans un tr\u00e8s bon restaurant, mais l\u00e0 o\u00f9 ils le souhaitent. <\/em> <\/p>\n\n\n\n

Et lorsque la soir\u00e9e approche, que les invit\u00e9s prennent place et que la premi\u00e8re assiette est apport\u00e9e, Francisco a l’air satisfait. Pour lui, il ne s’agit pas seulement de manger, mais aussi de cr\u00e9er des moments inoubliables.  <\/p>\n\n\n\n
